I am tired of tamales and I am tired of ham. Too much of the holiday food. Bill said the leftover tamales were starting to get dried out. I wasn’t ready to throw them away so I made a pot of chili today. I didn’t have any chili meat, but for this purpose, ground beef worked well.

I let it simmer on low all afternoon, and it was really good. 

I took the husks off the tamales and layered them in a dish.

There were only eight left. I covered them in chili and cheese and baked them at 350 for about 20 minutes.
It is a sort of tamale casserole. Is that a thing or did I invent something new? It was good, and I am always anxious to get done and get the kitchen cleaned up. Maybe tomorrow will be ham and eggs. 😁
